A Legacy Stirred by a Feather
Our story begins long before the first coal was lit in our oven. Gallo sits on the historic site of the once-famous Hustler’s Tavern, a landmark where legend says the "cocktail" was born. As the story goes, the tavern’s owner, Catherine Hustler, would use a rooster feather to stir her guests' drinks—coining a phrase that changed the world of spirits forever. In Italian, Gallo means rooster. Through our name and our hospitality, we pay tribute to this storied Lewiston past, keeping the spirit of the original "cocktail" tavern alive at 402 Center Street.

Fired by Tradition, Charred to Perfection
At the center of our kitchen is the Coal Fire Oven. Unlike traditional wood or gas, coal burns at a much higher intensity, allowing us to lock in moisture while creating the signature "char" that defines our menu. From our artisanal pizzas to our roasted Italian specialties, every dish is an exploration of heat and flavor. We don't just cook; we craft. Our process is a nod to the old-world methods of Italian-American kitchens, where the fire was the heart of the home.
